Cocoa Caviar

Ingredients

  • 400 gr.water
  • 100 gr. simple syrup (TPT)
  • 30 gr. Cocoa powder
  • 1 litro Water
  • Bath of clean water


Additives



Steps

-Combine and mix with an immersion blender, + simple syrup + water + cocoa powder + Alginate. Heat until the cocoa dissolves completely
-Mix water + Calcium
-Take the mixture with a seringue and drop the in the Calcium bath. Keep the sphere in the bath for one minute
-Wash the sphere in the bath of clean water
